Northern Michigan is a great place to be, but the annual cherry season makes it extra special. The reason is the countless cherry trees turn from green leaves to glowing white blossoms as the trees begin their annual transition from bud to blossom to finally the fruit. When this happens, ruby red cherries will start to appear and once they do they’ll offer a whole host of great tasting and healthy alternatives. So let’s take a closer look at some of the ways to enjoy cherries.
3 Quick and Easy Cherry Recipes
This is one of my favorite recipes since it can be enjoyed with tortilla chips, grilled chicken or salmon. It is easy to make and it will wow salsa lovers.
- 1 1/3 c. unsweetened fresh tart cherries (straight from the tree is best)
- 1/2 c. coarsely chopped dried tart cherries
- 1/4 c. finely chopped red onion
- 1 tbsp. chopped fresh or canned jalapeño peppers, to taste
- 1 clove garlic, finely chopped
- 1 tbsp. chopped fresh cilantro or 1/2 teaspoon dried cilantro
- 1 tsp. cornstarch
Directions: I like to pick the cherries directly from the tree to use in this recipe. After I wash them, I coarsely chop them. Let the cherries drain and reserve 1 tablespoon of cherry juice. After the cherries are chopped, combine them with dried cherries, onion, jalapenos, garlic and cilantro in a medium saucepan; mix well.
In a small container, combine reserved cherry juice and cornstarch; mix until smooth, then stir into cherry mixture. Cook, stirring constantly, over medium-high heat until mixture is thickened. Let cool. Serve with tortilla chips and/or cooked chicken or pork.
Servings: Makes about 1 cup
Tart cherry juice helps with inflammation and pain in the muscles and joint. Drinking cherry juice every day is a great way to fight pain and soreness in your body. Check out these morning cherry juice based breakfast ideas!
- 6 oz. of plain or vanilla yogurt (fastest way is to simply use the Yoplait 6 oz. containers)
- 1 oz. of Fruit Advantage Tart Cherry Juice Concentrate (two tablespoons)
Additional ideas: Toss in some frozen (sliced) or dried cherries or blueberries. As always, if you use dried fruit, soak the fruit in water briefly to soften them up before adding to the cooler temperature yogurt.
- 2 eggs
- 6 thawed frozen cherries
- ¼ tbsp. black pepper
- 1/8 tsp. basil
- 1/8 chopped onion
- ¼ c. grated parmesan cheese
- ¼ c. fresh garlic
- ½ tsp. cherry juice concentrate
Directions: Heat pan and place butter, onions and garlic, fry to bring out the flavor. Add the thawed cherries, black pepper, cherry juice concentrate, eggs and let mixture cook until firm. Add the cheese, fold from pan and serve.
